Ingredients
Crust
  • 2 cups zucchini shredded and drained well
  • 1/2 cup mozzarella cheese shredded
  • 3 TB Parmesan cheese grated
  • 1/4 cup flour
  • 1/2 tsp Italian seasoning spice blend
  • 1/4 tsp kosher salt
  • 1/4 tsp garlic minced
  • 1 tsp olive oil
  • 1 egg well beaten
Toppings
  • cooking spray
  • 1 cup cremini mushrooms chopped
  • 1 cup red pepper diced
  • 1/2 cup onion diced
  • 1/4 tsp garlic minced
  • 1/4 tsp Italian seasoning spice blend
  • 1/4 tsp kosher salt
  • 3/4 cup goat cheese crumbled
  • 2 TB kalmata olives chopped
Instructions
  1. Preheat oven to 400 degrees and line a baking pan with parchment. Coat with cooking spray and reserve.
  2. Squeeze as much liquid out of zucchini as possible and combine with remaining crust ingredients in a large bowl.
  3. Spoon into two 8” circles on prepared baking sheet and smooth with a spoon. Bake for 20 minutes or until medium brown on the bottom and flip over. Bake for another 10-15 minutes or until evenly browned.
  4. While crust bakes, coat a large nonstick skillet with cooking spray and heat over medium-high heat. Cook mushrooms, peppers, and onion for 5-8 minutes, stirring often, until softened.
  5. Add garlic, Italian seasoning blend, and salt. Sprinkle evenly across pizza crusts and top with goat cheese and kalamata olives. Return to oven and bake for 3-5 minutes or until cheese melts.
