  • 2 cups zucchini shredded and drained well
  • 1/2 cup mozzarella cheese shredded
  • 3 TB Parmesan cheese grated
  • 1/4 cup flour
  • 1/2 tsp Italian seasoning spice blend
  • 1/4 tsp kosher salt
  • 1/4 tsp garlic minced
  • 1 tsp olive oil
  • 1 egg well beaten

  • cooking spray
  • 1 cup cremini mushrooms chopped
  • 1 cup red pepper diced
  • 1/2 cup onion diced
  • 1/4 tsp garlic minced
  • 1/4 tsp Italian seasoning spice blend
  • 1/4 tsp kosher salt
  • 3/4 cup goat cheese crumbled
  • 2 TB kalmata olives chopped

  • Preheat oven to 400 degrees and line a baking pan with parchment. Coat with cooking spray and reserve.
  • Squeeze as much liquid out of zucchini as possible and combine with remaining crust ingredients in a large bowl.
  • Spoon into two 8” circles on prepared baking sheet and smooth with a spoon. Bake for 20 minutes or until medium brown on the bottom and flip over. Bake for another 10-15 minutes or until evenly browned.
  • While crust bakes, coat a large nonstick skillet with cooking spray and heat over medium-high heat. Cook mushrooms, peppers, and onion for 5-8 minutes, stirring often, until softened.
  • Add garlic, Italian seasoning blend, and salt. Sprinkle evenly across pizza crusts and top with goat cheese and kalamata olives. Return to oven and bake for 3-5 minutes or until cheese melts.

Crust can be made ahead and reheated in the oven before topping and serving.
