White Bean and Tomato Ragu

This easy Italian side is perfect to pair with simple roast chicken or grilled fish.

  • 1 TB olive oil
  • 1 cup diced onion
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 cloves minced garlic
  • ¾ tsp minced rosemary
  • pinch red pepper flakes
  • ¾ cup canned diced tomatoes
  • 1 15 oz can cannellini beans rinsed and drained
  • 2 TB chopped basil


  • Heat a medium nonstick sauté pan set over medium heat. Add olive oil, onion, salt, and pepper and cook for 7-10 minutes, stirring often, until softened. Add garlic, rosemary, and red pepper flakes and cook for 1 minute. Add tomatoes and beans, cover and simmer for 5 minutes for flavors to meld (add water to pan if it seems dry). Stir in basil and serve.
