Turkey Burgers with Bacon & Blue Cheese

These turkey burgers may be the dish that makes you a fan of this leaner, healthier option to traditional beef. Bold, savory blue cheese and minced portobello mushroom elevate the flavors and make this dish seem more decadent than it really is.

Ingredients
Burgers
  • 1 large portobello mushroom cap chopped (1 cup)
  • 1/3 cup chopped shallot
  • 1 tbsp light mayonnaise
  • 2 tsp minced rosemary
  • 3/4 tsp kosher salt
  • 1/2 tsp Worcestershire sauce
  • 1 lb lean ground turkey
  • cooking spray
Blue Cheese Spread
  • 2 tbsp light mayonnaise
  • 2 tbsp crumbled blue cheese
  • 4 pieces lettuce
  • 4 sandwich thins
  • 4 slices tomato
  • 4 slices bacon cooked
  • pinch ground pepepr
  • 1/4 tsp Dijon mustard
Instructions
  1. Combine mushroom, shallot, rosemary, Worcestershire, mayonnaise and salt in a food processor and pulse until minced fine. Combine with turkey and form 4 -3 ½” wide patties. Chill until ready to grill.
  2. Combine mayonnaise, blue cheese, Dijon mustard and pepper in a small bowl. Reserve.
  3. Coat a grill pan or outdoor grill with cooking spray. Heat over medium-high heat and grill burgers for 5-6 minutes per side or until cooked through. Top each burger with 1 TB blue cheese spread, 1 slice bacon, lettuce, and tomato before serving.
Recipe Notes

Blue cheese spread and burger patties can be made up to 2 days before cooking.
