Turkey & Black Bean Tortilla Soup

Turn your leftover holiday turkey into this hearty, super tasty dish that everyone will love. Plus, everyone gets to customize their bowl with shredded cheese, sour cream, crushed tortilla chips, and other fun toppings.

Servings: 10 cups
  • 1 TB olive oil
  • 1 ½ cups chopped onion
  • 1 tsp kosher salt
  • 4 tsp minced garlic
  • 1 jalapeno seeded and minced
  • 1 tsp ancho chili powder
  • 6 cups chicken broth
  • 1 15 oz can fire roasted tomatoes drained
  • 2 ,15 oz cans black beans rinsed, drained
  • 4 cups shredded cooked turkey
  • 1/3 cup fresh lime juice
  • 1/2 cup chopped cilantro
Optional Toppings: Shredded Cheddar or Mexican 4-Cheese, Sour Cream, Tortilla Chips, Lime Wedges
  1. Heat olive oil in a large soup pot set over medium heat. Add onion and salt and cook for 5-10 minutes or until onion is softened. Add garlic, jalapeno, and ancho chili powder and cook for 1 minute. Add broth, tomatoes, black beans, turkey and lime juice. Bring to a simmer and cook for 10-15 minutes for flavors to meld. Stir in cilantro and serve topped with optional garnishes.
