A Riesling wine reduction pairs perfectly with the sweet summer peaches in this elegant dessert.
A sprinkle of minced crystallized ginger gives it a special touch. Try it at your next summer dinner party.
- 4 large ripe peaches
- 1 TB sugar
- ½ tsp lemon juice
- ¼ cup medium bodied Riesling wine
- 4 tsp minced crystallized ginger
Wash and thinly slice peaches, and set aside. Combine sugar, lemon juice, and 1 ½ TB warm water in a small sauce pan. Simmer on medium-high heat until syrupy - for approximately 2 minutes.
Remove from heat, add wine to pan, stir well, and return to heat at medium high. Simmer to reduce the wine by half for approximately 4 minutes, until syrupy. Remove from heat and let cool.
Toss Riesling reduction with peaches and allow to sit at room temperature for several minutes. Toss again to distribute juices and reduction. Divide evenly into 4 servings, top each serving with 1 tsp minced crystallized ginger.
