Spring Greens Salad with Grapes, Goat Cheese & Honey-Champagne Vinaigrette

This easy, elegant salad is a flavorful light lunch, or you can add some sliced grilled chicken to the top for a heartier meal. You can also substitute the arugula with some of your other favorite baby greens.

  • 2 TB extra virgin olive oil
  • 1 TB champagne vinegar
  • 1 TB honey
  • 1 TB minced chives
  • 1 TB warm water
  • ½ tsp kosher salt
  • 1/8 tsp pepper
  • 4 cups arugula
  • 1 cup thinly sliced radicchio
  • 1 1/3 cups seedless red grapes halved
  • ¼ cup crumbled goat cheese
  • ¼ cup toasted sliced almonds


  • In a small bowl, whisk together olive oil, vinegar, honey, chives, water, salt and pepper. When ready to serve, toss arugula and radicchio together, pour dressing over, and toss to coat. Pile greens evenly across 4 salad plates. Garnish each salad with 1/3 cup grapes, 1 TB goat cheese, and 1 TB toasted almonds.
