Give basic grilled shrimp a hyper-powered taste boost with this easy spice rub and a bit of smoky roasted pepper vinaigrette.
- 1 TB olive oil
- 1 ½ TB sherry vinegar
- 1 1/2 TB lemon juice
- 4 tsp smoked paprika
- 1 tsp granulated garlic
- 1 tsp cumin
- pinch salt
- 2 lb large shrimp peeled & deveined
- 1 batch Smoky Spanish Vinaigrette
Combine olive oil, sherry vinegar, lemon juice, smoked paprika, garlic, cumin, and salt in a large bowl. Toss in shrimp and marinate for 30 minutes. Heat a grill or grill pan over high heat and coat with cooking spray. Grill shrimp for 2-3 minutes per side or until lightly charred and firm. Divide shrimp across 8 plates and serve drizzled with 2 TB Smoky Spanish Vinaigrette
