Spicy Hoisin Turkey Stir Fry

Skip the usual next day sandwich and use your holiday turkey for this spicy stir fry instead. Works great with rotisserie chicken, too! So, you can enjoy this quick dinner all year long.

  • 1 TB toasted sesame oil
  • 1 large onion chopped
  • 2 cups chopped shitake mushrooms
  • 1 red bell pepper diced
  • 1 cup shredded carrots
  • 1 tsp minced fresh ginger
  • 1 tsp minced garlic
  • 2 cups diced leftover turkey
  • ½ cup roasted salted cashews
  • 1/3 cup hoisin sauce
  • ½ tsp rice vinegar
  • 1 tsp sriracha or hot sauce
  • 1 large scallion sliced


  • Heat sesame oil in a large skillet or wok over medium-high heat. Add onion and mushrooms and cook for 5-7 minutes or until beginning to brown. 
  • Add pepper and carrots and cook for 2-3 minutes or until crisp-tender. Add ginger, garlic, and turkey and cook for 1 minute. Add remaining ingredients and cook for 5 minutes to heat through and for flavors to blend. 
  • Serve garnished with additional scallion as is or with rice or noodles.
