Smoky Vinaigrette

This smoky vinaigrette is delicious drizzled over simple grilled shrimp or chicken.

Ingredients

  • 1 cup roasted peppers rinsed, drained, chopped (16 oz jar or homemade)
  • 1 TB olive oil
  • 1 tsp sherry vinegar
  • 1 tsp minced garlic
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp minced fresh oregano
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Instructions

  • Process in a small food processor or blender until smooth.
