Smoky Spicy BBQ Pork

Transform lean pork tenderloin into a juicy, rich-seeming, yet sneakily healthy, dish. It goes great with lots of picnic staples like traditional baked beans, corn on the cob or bright tomato salads.

Ingredients

  • 1 tsp smoked paprika
  • 1 tsp dark brown sugar
  • 2 tsp kosher salt
  • 1/2 tsp granulated garlic
  • 1/2 tsp chili powder
  • 1/4 tsp allspice
  • 1 tsp dried thyme
  • 1 lb pork tenderloin trimmed & butterflied

Instructions

  • Combine all dried spices to make rub. Spread evenly over the surface of pork and marinate in refrigerator for up to 24 hours. 
  • Preheat a grill or grill pan over medium-high heat and coat with cooking spray. Grill pork for 5-6 minutes per side or until medium rare. Let rest for several minutes before carving.
