Simple Greek Vinaigrette

This light, bright and tangy vinaigrette packs lots of flavor, with minimal fat. Made from fresh herbs and lemon juice, it's a perfect marinade for grilled chicken or drizzle over cooked fish.

  • ¼ cup dry white wine
  • ¼ cup fresh lemon juice
  • 1 large shallot minced (~3TB)
  • 2 tsp sugar
  • 1 tsp Dijon mustard
  • 2 TB extra virgin olive oil
  • 1 TB chopped fresh dill
  • 2 tsp chopped fresh oregano
  • 1 tsp chopped fresh parsley
  • 1 tsp kosher salt
  • ¼ tsp fresh ground black pepper
  1. Combine wine, juice, shallot, sugar, and mustard in a medium bowl. Slowly whisk in olive oil to combine. Whisk in herbs, salt, and pepper.
