  • 6 cups spiralized carrot ~4 extra large carrots
  • 4 tsp olive oil divided
  • 1 tsp kosher salt
  • 1 ½ tsp ground cumin
  • 1 ½ tsp ground coriander
  • 1/4 tsp cinnamon
  • 1/8 tsp cayenne pepper
  • 1 TB lime juice
  • 3 TB chopped fresh mint
  • 2 TB toasted almonds
  1. Preheat oven to 400 degrees and line two baking sheets with parchment paper. Toss carrots with 2 tsp olive oil, salt, and spices. Spread evenly across baking sheets and roast for 10 minutes.  

  2. Stir carrots and switch pan positions in the oven. Continue to roast for another 5-10 minutes or until carrots begin to lightly brown. Toss with remaining 2 tsp olive oil, lime juice, and mint and serve garnished with toasted almonds.
