Roasted Carrot Curls w Cumin, Mint & Almond

- 6 cups spiralized carrot ~4 extra large carrots
- 4 tsp olive oil divided
- 1 tsp kosher salt
- 1 ½ tsp ground cumin
- 1 ½ tsp ground coriander
- 1/4 tsp cinnamon
- 1/8 tsp cayenne pepper
- 1 TB lime juice
- 3 TB chopped fresh mint
- 2 TB toasted almonds
- Preheat oven to 400 degrees and line two baking sheets with parchment paper. Toss carrots with 2 tsp olive oil, salt, and spices. Spread evenly across baking sheets and roast for 10 minutes.
- Stir carrots and switch pan positions in the oven. Continue to roast for another 5-10 minutes or until carrots begin to lightly brown. Toss with remaining 2 tsp olive oil, lime juice, and mint and serve garnished with toasted almonds.
