A super simple cream cheese spread takes your basic grilled cheese to another level. Try them with a roasted tomato bisque for an elevated take on a comfort food classic.
- ¼ cup light cream cheese
- 4 tsp grainy mustard
- 3 TB minced shallot
- 1 TB minced dill pickle
- 8 slices multigrain bread
- ¾ cup shredded low fat sharp cheddar cheese
- Butter-flavored cooking spray
Combine cream cheese, mustard, shallot, and pickle in a small bowl. Spread mixture evenly across one side of all slices of bread. Top each sandwich with 3 TB cheddar cheese and press to close (with cream cheese mixture on the inside). Coat a large nonstick skillet with cooking spray and heat over medium heat. Cook sandwiches for 2-3 minutes per side or until lightly toasted and cheese is melted.
