Basic Vanilla Pizzelle for Cones

  • 3 large eggs
  • ¾ cup sugar
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 ¾ cup flour
  • 2 tsp baking powder
  • ½ cup melted butter

Flavored Whipped Cream for Filling

  • 4 ½ cups heavy cream well chilled
  • ¾ cup confectioners’ sugar
  • 1 TB Grand Marnier or Dark Rum optional
  • 1 tsp vanilla extract

For Garnish

  • 2,6 oz packages fresh raspberries
  • additional confectioner’s sugar for dusting

To make pizzelle cones:

  • Whisk together eggs, sugar, salt, and vanilla extact. Stir in flour and baking powder until combined. Stir in melted butter. Heat pizzelle maker according to manufacturers instructions and scoop 1 heaping tsp pizzelle batter in each mold. Cook according to manufacterers instructions. As pizzelles come off the griddle mold around cone form and let cool.

To make flavored whipped cream:

  • Place heavy cream in a large bowl of a stand mixer. Beat on high until soft peaks form. Add confectioners sugar and flavorings and beat just to combine.
  • When ready to serve place whipped cream in a large plastic baggie or piping bag and snip the tip. Pipe cream into cones and add raspberries to top. Garish with confectioners sugar and serve.

To speed and ease prep you can also use simple canned whipped cream – chocolate would be delicious in this recipe! You’ll need 2, 6.5 oz cans to fill all 32 cones.
