Peanut Butter Cups with White Chocolate
These easy no-bake peanut butter cups are exquisitely rich, while being sneakily not-that-bad for you. A white chocolate glaze adds a pretty touch to make them gift-worthy.
- 10 pitted dates
- 1/2 cup cocoa powder
- 1/3 cup creamy peanut butter
- 1 1/2 TB agave nectar
- 3 TB water
- ¼ tsp table salt
- ½ cup white chocolate chips
- 1 tsp vegetable oil
- Puree dates, cocoa powder, peanut butter, agave nectar, water and table salt in a food processor or blender. Spoon mixture into 30 mini cupcake liners (each the size of a rounded teaspoon) and press with back of spoon into a patty shape. Mix white chocolate chips and oil in a small glass bowl and microwave for 30-60 seconds, stirring often, until smooth. Spread evenly over the top of each patty and let set.
