Oatmeal with Strawberry-Ginger Compote

Give creamy oatmeal a spring touch with fresh, spicy strawberry-ginger compote for a delicious breakfast. Get the compote ready ahead of time and be sure to make extra so you can try it on yogurt or cottage cheese.

  • 1 16 oz package strawberries rinsed, hulled, and sliced
  • 2 TB minced crystallized ginger
  • 1 TB sugar
  • ¼ tsp ground ginger
  • 1 ¾ cup low fat milk
  • 1 ¾ cup water
  • ¼ tsp table salt
  • 2 cups old-fashioned oats
  • ¼ tsp ground ginger
  • ¼ tsp ground cinnamon


  • Toss strawberries with crystallized ginger, sugar, and ground ginger in a medium sized bowl. Set aside. In a medium saucepan over medium heat, warm milk and water to a low simmer. 
  • Stir in salt, oats, ginger, and cinnamon and cook, stirring occasionally until thick or approximately 5-6 minutes. Top each serving of oatmeal with strawberry compote.


If fresh strawberries aren’t in season, frozen strawberries make an excellent substitute.
