Mixed Greens Salad w Beet & Oranges
Beets and oranges create a beautiful, unique flavor combination that is absolutely delicious paired with our sesame-ginger vinaigrette. Try serving this salad as a tasty side or add a sautéed tuna steak to make it a hearty meal.
Servings: 4 servings
- 6 cups mixed greens
- 2 cups orange segments
- 2 cups sliced roasted beets
- ½ cup chopped shallot
- ½ cup torn mint leaves
Sesame Ginger Vinaigrette
- ¼ cup seasoned rice wine vinegar
- 1 TB warm water
- 1 tsp minced ginger
- 4 tsp sesame oil
- ¾ tsp salt
- ¼ tsp pepper
- Whisk together Sesame Ginger Vinaigrette ingredients. Toss together greens orange segments, beets, and shallot. Drizzle with vinaigrette and garnish with mint leaves.
Brush a 4 oz. tuna steak lightly with vegetable oil, and season with salt and pepper. Sear quickly on a grill or in a pan over high heat to brown while keeping center pink. Thinly slice and serve on top of salad.
