Mexican Chopped Salad

Traditional Mexican ingredients like black beans and cooked corn come together in this super tasty, super easy salad. A Garlic-Ranch Dressing tops it off with a perfect flavor that everyone will love! Try this salad as a fun side or add some grilled chicken to round it out as a hearty entrée.

Ingredients

Salad

  • 6 cups chopped romaine lettuce
  • 2 cups cooked corn
  • 2 cups black beans
  • 2 cups halved grape tomatoes
  • 1 1/3 cups shredded carrot
  • 4 radishes thinly sliced
  • 2 scallions thinly sliced

Garlic Ranch Dressing

  • ¼ cup fat-free Greek yogurt
  • 1-2 TB warm water
  • 4 tsp olive oil
  • ½ tsp minced garlic
  • 1 ½ TB minced dill
  • 1 ½ TB minced parsley
  • ¾ tsp salt
  • ¼ tsp pepper

Instructions

  • Whisk together Garlic Ranch Dressing ingredients.
  • Top lettuce with corn, beans tomato, carrot, and radish.
  • Drizzle with dressing and garnish with sliced scallion

Notes

Optional: Add 3 oz grilled chicken. Spray thinly sliced chicken cutlet lightly with olive oil cooking spray and season with salt and pepper. Grill until firm and cooked through. Slice thinly and top salad.
