Individual Ginger-Peach Pies

Perfect for a summer party or BBQ!  These sweet and spicy little hand pies are a fun make ahead treat featuring juicy summer peaches.

  • cooking spray
  • 1 pie crust cut into 8, 4” circles
  • 2 cups diced peeled peaches or defrosted frozen peaches
  • 3 TB sugar
  • 1 tsp minced ginger
  • 1 tsp cornstarch
  • ½ tsp lemon juice
  • pinch kosher salt


  • Preheat oven to 425 degrees. Coat a muffin tin with cooking spray. Press pie crust circles into 8 muffin cups. Toss together peaches, sugar, ginger, cornstarch, lemon juice, and salt and put filling in crust. Bake for 20 minutes or until bubbly and crust is browned.
