Grape & Goat Cheese Salad w Tarragon-Champagne Vinaigrette
Evoke traditional French flavors with this incredible Tarragon-Champagne Vinaigrette atop a beautiful mixed greens salad tossed with grapes and goat cheese. A delicious side for roast chicken or pork, you can also serve this salad as an entrée by just topping it with grilled shrimp.
Servings: 4 servings
- 6 cups mixed greens
- 2 cups sliced cucumber
- 2 cups halved grapes
- ¼ cup toasted slivered almonds
- ¼ cup crumbled goat cheese
- ¼ cup minced shallot
- ¼ cup chopped tarragon
- ¼ cup champagne vinaigrette
- 3 TB warm water
- 4 tsp olive oil
- ¾ tsp salt
- ¼ tsp pepper
- Whisk together all dressing ingredients. Toss together greens, cucumber, and grapes. Drizzle with dressing and garnish with almonds and goat cheese.
Optional: Add 5 oz grilled shrimp. Spray lightly with olive oil cooking spray and season with salt and pepper. Grill until firm.
