Grape & Goat Cheese Salad w Tarragon-Champagne Vinaigrette

Evoke traditional French flavors with this incredible Tarragon-Champagne Vinaigrette atop a beautiful mixed greens salad tossed with grapes and goat cheese. A delicious side for roast chicken or pork, you can also serve this salad as an entrée by just topping it with grilled shrimp.

  • 6 cups mixed greens
  • 2 cups sliced cucumber
  • 2 cups halved grapes
  • ¼ cup toasted slivered almonds
  • ¼ cup crumbled goat cheese
Tarragon-Champagne Vinaigrette
  • ¼ cup minced shallot
  • ¼ cup chopped tarragon
  • ¼ cup champagne vinaigrette
  • 3 TB warm water
  • 4 tsp olive oil
  • ¾ tsp salt
  • ¼ tsp pepper
  1. Whisk together all dressing ingredients. Toss together greens, cucumber, and grapes. Drizzle with dressing and garnish with almonds and goat cheese.
Recipe Notes

Optional: Add 5 oz grilled shrimp. Spray lightly with olive oil cooking spray and season with salt and pepper. Grill until firm.
