Hit the Produce Section First
To make healthy eating easier, I love to stock up on veggies you can enjoy raw in salads or cooked for maximum flexibility like baby spinach, grape tomatoes, peppers, and cremini mushrooms. (Tip! Add minced cremini mushrooms to ground turkey for the juiciest turkey burgers ever.) ACME’s Signature Farms® had so many fantastic produce options! Stock Up on Staples

When it comes to summer, I always stock up on the staples I’ll be using all season long to be ready for every picnic and BBQ! For me that’s things like paper towels, paper plates, plasticware, storage containers, hamburger buns, dill relish, and other condiments(personally I can also never have too much coffee on hand!). Don’t Forget the Treats!

To keep cool all summer long I also stock the freezer with ice cream to make milkshakes or smoothies for my girls, plus frozen mixed berries for me for snacking or a fast sorbet. Just pulse any frozen fruit in your food processor or blender for a healthy frosty treat! I also always keep easy pre-made appetizers in the freezer like delicious spanakopita that will be perfect for impromptu hangouts on the deck with friends. Even my pup Harvey got some special Signature dog treats!

Chopped Chicken BLT Salad with Parmesan Ranch Dressing

This easy chopped salad is perfect for picnics or a weeknight dinner.  I like to arrange everything in pretty piles on a large platter so everyone can serve themselves their favorites.  You can also divide this salad up into small containers to bring to the beach or meal prep for weekday lunches too!  Greek yogurt lightens up typically heavy ranch dressing -  you can also serve this dressing as an easy healthy summer dip with veggies.

  • 1 rotisserie chicken skin removed, breast meat diced or shredded
  • 4 cups baby spinach
  • 2 cups grape tomatoes halved
  • 2 cups carrots diced
  • 2 cups cucumber diced
  • 1 cup cremini mushroom sliced
  • 6 hard boiled eggs sliced
  • 6 sliced bacon cooked and crumbled
  • 1 avocado diced

Parmesan Ranch Dressing

  • 1 cup Greek yogurt
  • 2 TB parmesan cheese grated
  • 2 tsp dill relish
  • 1 tsp garlic minced
  • 1 TB fresh herbs ie: parsley, dill, basil, chives, or tarragon


  • Arrange all salad ingredients in small piles on a serving platter or divide evenly across 6 plates or serving containers
  • Whisk together all Parmesan Ranch Dressing ingredients and place in a small bowl to serve with the salad.


Tip:  To avoid heating up the kitchen, place bacon slices on a paper towel lined plate and top with a paper towel. Microwave for 1 minute per slice or until crispy.
