Freekeh Tabouli with Lemon & Feta

Ingredients

  • ¾ cup freekeh
  • cup water
  • ¼ tsp kosher salt
  • 1 cup halved grape tomatoes
  • 1 cup diced cucumber peeled &seeded
  • 2/3 cup red onion minced
  • 1/3 cup fresh mint minced
  • 1/3 cup fresh parsley minced
  • 1/3 cup feta crumbled
  • 1 lemon cut into wedges
  • Dressing
  • 1 TB extra virgin olive oil
  • 4 tsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp minced garlic
  • ½ tsp kosher salt

Instructions

  • Combine freekeh, water, and salt in a small saucepan. Bring to a boil, reduce to a simmer, cover, and cook for 20-25 minutes or until water is absorbed and freekeh is tender. Let cool and toss in tomatoes, cucumber, onion, mint and parsley. Combine dressing ingredients in a small bowl and toss with salad before serving. Serve garnished with feta and lemon wedges.
