This easy, refreshing, no-cook dish is like summer on a plate! English Cucumbers are transformed into crisp juicy noodles and topped with a delicious Lemon-Herb Pesto and your choice of poached or grilled shrimp. Grape Tomatoes add a burst of sweetness and gorgeous color to make this recipe really stand out!
English Cucumbers add crisp, fresh flavor to this simple no-cook salad! They’re easy and speedy to spiralize but if you don’t own a vegetable noodle tool just use your standard peeler to create pretty cucumber “ribbons”. You can also enjoy these delicious cucumbers sliced as a light sandwich topping, or diced in a classic Mediterranean style salad.
Not only do they taste great – Long English Cucumbers hydrate to keep you feeling great all day too! The extremely high-water content of cucumbers is a great way to up your water intake but with more crunch and flavor than a basic glass of water. They’re also a fantastic source of iron and fiber!
Feel free to use any mix of soft herbs you have on hand to make this pesto. I love a combination of classic basil with a little parsley for an herbal note, but you can also try tarragon, chives, mint, or cilantro here! (This pesto is my favorite way to use up leftover herbs anytime – it’s also delicious to top grilled chicken or fish.)
Red Grape Tomatoes add a burst of sweetness to this dish and are also a great lunchtime pick-me-up or healthy snack. They’re filled with Vitamin C to help protect you from infections by keeping your immune system healthy while their Increased lycopene levels have been associated with a reduction in cardiovascular disease.
You can top this salad with simple poached shrimp or just toss raw shrimp on the grill for 2-3 minutes if you like. For vegetarian friends you can skip the shrimp and just add some crumbled goat cheese or feta.

Cucumber Noodle Salad with Shrimp & Lemon-Herb Pesto
- 2 English Cucumbers spiralized or peeled into ribbons
- 1 pint grape tomatoes halved
- 1 lb shrimp grilled or steamed
Lemon Herb Pesto
- 2 cups mixed fresh herbs basil, mint, chives, parsley, tarragon, or cilantro
- 1/2 cup pine nuts toasted
- 2 TB olive oil
- 2 TB lemon juice
- 1 tsp lemon zest
- 1 garlic clove
- 1/2 tsp kosher salt
- 1 pinch red pepper flakes
- Combine Lemon Herb pesto ingredients in a food processor or blender. Toss together with cucumber noodles and top with tomatoes and shrimp. Garnish with additional fresh herbs and hot pepper flakes as desired and enjoy!
