Creamy Tofu Mac & Cheese

Protein-packed silken tofu is the secret ingredient in this luscious mac and cheese that both kids and grownups alike will gobble up! Add cooked veggies (such as cauliflower, broccoli, or carrots) for a complete meal.

Ingredients

  • 12 oz elbow macaroni
  • 12 oz box silken tofu
  • 2 cups low fat cheddar cheese shredded
  • 2 TB low fat milk
  • 1 tsp butter
  • 1 TB light sour cream
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • ½ tsp garlic powder
  • 1/8 tsp pepper
  • Pinch cayenne pepper

Instructions

  • Cook macaroni according to package instructions in salted water. While cooking, combine all other ingredients in a food processor or blender until smooth. When macaroni is done drain well and return to warm pan. Add tofu-cheese sauce and heat over low heat until gooey and smooth.

Notes

This dish can also be made ahead and combined in a cooking spray lined 2 qt casserole.Just cover and bake at 350 for 20-25 minutes until bubbly.
