Tarragon Marinade
  • ¼ cup minced tarragon
  • 3 TB Dijon mustard
  • 3 TB champagne vinegar
  • 2 TB warm water
  • 2 tsp extra virgin olive oil
  • 2 tsp honey
  • 2 tsp kosher salt
  • ¼ tsp black pepper
  • 1 lb chicken breasts cubed
  • 1 large red onion cut into chunks
  • 4 large skewers
  • Cooking spray
  1. Combine all marinade ingredients. Toss with chicken and refrigerate for 1 hour to overnight. Thread chicken and red onion chunks evenly across skewers. Coat a grill pan or outdoor grill with cooking spray and heat over high heat. Grill chicken for approximately 10 minutes (turning often for even browning) or until grill marks are evident and chicken is cooked through.
