Cheesy Broccoli Frittata
This amazing frittata is packed with flavor even though it only uses 3 main ingredients! Delicious for brunch or as a hearty, healthy lunch.

- 1 10 oz box Green Giant Broccoli & Cheese
- 1 cup egg substitute
- ¼ cup minced shallot
- ¼ tsp salt
- Pinch cayenne pepper
- Butter flavor cooking spray
- 1 TB fresh minced dill
Cook broccoli and cheese according to package instructions. Pour into a medium sized bowl, use the back of a fork to break up large pieces of broccoli, and let cool slightly. Whisk in egg substitute, shallot, salt, and pepper.
Spray 2 standard sized nonstick omelet pans (or 1 medium sized non-stick skillet) with cooking spray. Heat pan(s) over medium high heat and pour in egg mixture. Cook, without stirring, for 5-7 minutes or until bottom is set. Move pan(s) to oven and broil on low for an additional 5-7 minutes or until top is set. Place a plate on top of pan and flip to un-mold. Garnish with dill and serve.
