Ingredients

Burgers

  • 1 lb peeled deveined shrimp patted dry
  • ¼ cup minced red pepper
  • ¼ cup chopped cilantro
  • ¼ cup chopped scallions
  • ¼ cup bread crumbs
  • 2 TB light mayonnaise
  • ½ tsp minced garlic
  • ½ tsp minced ginger
  • ¼ tsp salt
  • ¼ tsp sriracha or hot sauce
  • 2 whole wheat pitas halved widthwise

Wasabi Slaw

  • 2 TB light mayonnaise
  • 1 ½ tsp wasabi paste
  • 1 tsp rice wine vinegar
  • 1 tsp toasted sesame oil
  • ½ tsp minced ginger
  • ½ tsp minced garlic
  • 2 cups cole slaw mix
  • 1/3 cup chopped red pepper
  • ¼ cup chopped cilantro additional for garnish
  • 2 TB chopped scallions

Instructions

To make burgers:

  • Pulse shrimp in food processor until coarsely chopped (can also be done by hand). Combine all other ingredients (except pita) in a large bowl.
  • Gently fold in shrimp until combined. Shape into 4 even ½” thick patties on a plate, cover and chill for 30 minutes to overnight to set.
  • Coat a grill or grill pan with cooking spray and heat over medium heat. Grill burgers 8-9 minutes per side or until firm and pink throughout.

To make slaw:

  • Combine mayonnaise, wasabi, vinegar, sesame oil, ginger, and garlic and keep chilled (may be made up to 1 day ahead). When ready to serve, combine dressing with remaining slaw ingredients.
  • To assemble burgers, place one burger in each pita half and fill with slaw. Garnish with cilantro and serve immediately.
