Turkey Rainbow Wraps
When I taught healthy cooking classes for children; my mommy and me rainbow wrap sandwich was always a hit! Kids love layering colorful veggies over their favorite spread such as hummus or ranch in a tortilla. Just help them roll it up and cut in half cross-wise to see "the rainbow"! A great way to get them excited about eating vegetables while also taking part in making their lunch.
- 1 whole wheat tortilla
- 3 TB ranch dressing or hummus
- 1 oz deli turkey
- baby spinach leaves
- shredded red cabbage
- shredded carrots
- thin sliced tricolor peppers
- Use a knife to evenly layer your spread of choice on the whole wheat tortilla. Then add your preferred sandwich items (turkey, ham, or roast beef shredded veggies, etc.), allowing your child to pick which items they want to place on top of the other. After all toppings are added, roll up tortilla burrito style and slice in half cross wise to reveal "the rainbow"
Tips: Don’t use tomatoes or it will make the wrap soggy. Save time by buying pre-shredded veggies or let kids help shred veggies in the food processor or over a box grater.
