Smokey Spicy BBQ Pork

Transform lean pork tenderloin into a juicy, rich-seeming, yet sneakily healthy, dish. It goes great with lots of picnic staples like traditional baked beans, corn on the cob or bright tomato salads.

Prep time: 5 minutes (plus time to marinate)
Cook time:  10 minutes
Yield: 4 servings


  • 1 tsp smoked paprika
  • 1 tsp dark brown sugar
  • 2 tsp kosher salt
  • ½ tsp granulated garlic
  • ½ tsp chili powder
  • ¼ tsp allspice
  • 1 tsp dried thyme
  • 1 lb pork tenderloin, trimmed & butterflied


Combine all dried spices to make rub. Spread evenly over the surface of pork and marinate in refrigerator for up to 24 hours. Preheat a grill or grill pan over medium-high heat and coat with cooking spray. Grill pork for 5-6 minutes per side or until medium rare. Let rest for several minutes before carving.
