Yield: 4 servings
- 2 TB olive oil
- 2 tsp lemon zest
- 2 tsp lemon juice
- 1 TB minced garlic
- 2 tsp minced rosemary
- 1 tsp minced thyme
- 1 TB dry white wine
- ¼ cup chicken broth
- 1 lb thin chicken cutlets or chicken tenderloins
- Optional, ½ cup chicken broth
Combine all marinade ingredients and toss with chicken. Refrigerate overnight or at least 6 hours. Preheat a grill or grill pan over medium-high heat and coat with cooking spray. Grill chicken for 3-4 minutes per side or until cooked through.
To make optional glaze: Combine remaining marinade with ½ cup chicken broth in a small saucepan. Heat on high and bring to a boil for 5 minutes or until reduced to a slightly thick. Toss grilled chicken in glaze or drizzle over the top.
