A tastier take on the classic ham and cheese, these Monte Cristo sandwiches are a flavorful treat that are perfect for lunch or a hearty afternoon snack.

- 2 tsp honey mustard
- 2 tsp light mayonnaise
- 4 slices light whole grain bread
- 3 oz light sliced swiss cheese (about 4 slices – such as Alpine Lace)
- 4 oz sliced ham (about 4 slices)
- 2 eggs
- Butter flavor cooking spray
Combine honey mustard and mayonnaise in a small bowl. Spread across one side of all 4 slices of bread. Top with one slice of cheese. Add ham to half the slices and sandwich with cheese/bread.
Spray a nonstick skillet with cooking spray and heat over low to medium heat. Cook sandwiches for 4-5 minutes per side or until cheese is melted.
