Wild Rice Pilaf with Thyme & Shallots

Pair this tasty, lemon-y side dish with fish, chicken, or roasted meats.  Don't love thyme? Try other minced herbs for different flavor profiles.

  • 1 tsp extra virgin olive oil
  • 3 TB minced shallots
  • 1 ½ cups wild rice
  • 1 ¾ cups chicken broth
  • 1 ½ tsp minced fresh thyme
  • 1 ½ tsp lemon zest
  • ¾ tsp lemon juice


Heat olive oil in a small saucepan over medium-low heat. Add shallots, sprinkle with ½ tsp kosher salt, and cook, stirring frequently until shallots are softened (approximately 6 minutes). Add wild rice and broth to pan, bring to a boil. Reduce to a simmer, cover, and cook for ~ 45 minutes until rice is tender. Stir in thyme, lemon zest, and lemon juice. Season to taste with salt and pepper.
