Cinnamon-Sugar Oatmeal with Strawberries

This tasty breakfast treat packs a high-fiber punch and is a great way to kickstart your day. It's a healthy, satisfying meal that's super easy to make.

Prep:  10 minutes
Cook: 5-6 minutes
Yield: 4 Servings

  • 1 16 oz package strawberries, rinsed, hulled, and sliced
  • 1 TB sugar
  • 1 ¾ cup milk
  • 1 ¾ cup water
  • ¼ tsp table salt
  • 2 cups old-fashioned oats
  • 3/4 tsp vanilla extract
  • 1 TB dark brown sugar
  • ¼ tsp ground cinnamon

Toss strawberries with sugar in a medium sized bowl.  Set aside.  In a medium saucepan over medium heat, warm milk and water to a low simmer.  Stir in salt, oats, brown sugar, vanilla extract, and cinnamon and cook, stirring occasionally until thick or approximately 5-6 minutes.  Top each serving of oatmeal with strawberry compote.

If fresh strawberries aren’t in season, frozen strawberries make an excellent substitute. A splash of lemon juice can also brighten “less than ripe” strawberries.
