Cook Time: 12 minutes
Yield: 4 Servings

      Turkey Burgers

  • 1 medium red onion
  • 1 small red bell pepper, seeded
  • 1 jalapeno pepper, seeded
  • 2 cloves garlic
  • ¼ cup cilantro
  • 1 TB lime juice
  • 1 tsp dried oregano
  • 1 tsp cumin
  • ¾ tsp kosher salt
  • 1/3 cup plain breadcrumbs
  • 1 lb lean ground turkey
  • 4 hamburger buns
  • 4 thick slices beefsteak tomato
  • 4 pieces romaine lettuce

      Avocado Topping

  • ½ ripe avocado, mashed
  • 1 TB minced cilantro
  • 1 TB minced red onion
  • 1 tsp lime juice
  • ¼ tsp cumin
  • ¼ tsp kosher salt

Cut onion into 4 even pieces, reserve 1 for avocado topping and garnish. Place remaining 3 onion pieces, peppers, cilantro, lime juice, spices, and salt in a food processor. Pulse until finely chopped. (Can also be finely chopped and combined by hand). Fold in breadcrumbs and turkey. Form into 4 even patties. Chill until ready to grill. (Patties can be made up to 2 days prior to cooking.)

When ready to grill, make avocado topping. Mince remaining piece of onion, mash together avocado, cilantro, 1 TB minced onion (reserve rest for topping burgers), lime juice, cumin, and salt.

Coat a grill or grill pan with nonstick cooking spray over medium high heat. Grill burgers for 5-6 minutes per side or until cooked through. Serve burgers on toasted bun topped with 1 1/2 TB avocado topping, extra red onion, lettuce and tomato.
