Basil Pesto with Mint

Use up your summer mint in this fresh take on pesto. Try it on pasta salad, drizzled over fresh tomatoes, as an accompaniment to grilled lamb, chicken or fish, or stirred into summer soups.

  • 3 cups fresh mint
  • 1 cup fresh basil
  • ¼ cup chicken stock
  • 2 TB extra virgin olive oil
  • 2 TB toasted pine nuts
  • 2 cloves garlic
  • 1 TB fresh lemon juice
  • 1 tsp kosher salt
  • ¼ tsp crushed red pepper flakes


Combine all ingredients in a food processor or blender. Blend on high until smooth and combined (scraping down the bowl sides as necessary).
