Chinese Chicken Salad with Sesame Ginger Dressing

Make simple chicken salad really special with a flavorful sesame ginger dressing. Great for lunch or a light supper.

Salad Ingredients

  • 1 lb chicken tenders
  • 3 TB reduced sodium soy sauce
  • 2 TB rice wine vinegar
  • 1 tsp sesame oil
  • Cooking spray
  • 4 cups shredded napa cabbage
  • 2 cups shredded red cabbage
  • 2 cups shredded carrots
  • 1 red pepper, thinly sliced
  • 1 cup edamame
  • 2TB chopped scallions
  • 2 TB chopped cilantro
  • 1 TB toasted sesame seeds

Sesame Ginger Dressing

  • 2 TB rice wine vinegar
  • 2 TB honey
  • 4 tsp sesame oil
  • 1 TB olive oil
  • 1 TB warm water
  • 1 TB minced ginger
  • 1 TB low sodium soy sauce
  • 2 tsp minced garlic
  • 1 tsp sriracha


Combine chicken tenders, soy sauce, rice wine vinegar, and sesame oil in a Ziploc baggie. Toss to combine and marinate at least 15 minutes or up to overnight. Whisk together all vinaigrette ingredients and reserve. When ready to cook, coat a grill or grill pan with cooking spray, remove chicken from marinade and grill for 3-4 minutes per side or until cooked through. Combine cabbages, carrots, and edamame and divide among serving bowls. Top with chicken, drizzle with dressing, and garnish with sesame seeds, scallions, and cilantro.


To speed prep you can substitute an equal amount of precooked chicken breast if you like. The dressing can be made up to 3 days ahead and stored in the refrigerator. Bring to room temperature and whisk before serving.
