Venison Sausage Patties

Try these slightly sweet, super savory breakfast sausages for your next brunch party or for your own morning meal. Store pre-made patties in wax paper to cook later.

  • 1 lb ground venison
  • ½ cup finely grated onion
  • ½ cup grated granny smith apple
  • 4 tsp minced fresh sage
  • 4 tsp sugar
  • 2 tsp kosher salt
  • ¼ tsp allspice
  • Cooking spray


Combine venison, onion, apple, sage, sugar, salt, and allspice in a medium bowl. Shape into 12 2” patties. Coat a large non-stick griddle with cooking spray over medium heat. Cook patties until lightly browned and cooked through. 


Patties can be made ahead and frozen, too. Just be sure to defrost them fully before cooking.
