Impress your guests with these ridiculously simple yet deliciously elegant canapés. They work as brilliantly at an afternoon brunch as they do at an evening soiree.

- 1/2 cup light cream cheese, softened
- 1/3 cup minced red onion
- 4 tsp fresh lemon juice
- 1 TB lemon zest
- ¼ tsp kosher salt
- 1 english cucumber, sliced into 40 rounds
- 12 oz sliced smoked salmon, sliced into 40 pieces
- 1 bunch fresh dill, leaves torn into pieces
Combine cream cheese, onion, lemon juice, lemon zest, and salt in a small bowl. Reserve. Arrange cucumber slices on a large platter, top each with one piece of salmon and ½ tsp cream cheese topping. Garnish with one small piece of dill.
These may be made the morning of the party, just top with a lightly dampened paper towel and plastic wrap to keep them fresh.
