Chicken Breasts with Apricot-Balsamic Glaze

An apricot-balsamic glaze gives a sweet and tangy flavor to basic chicken breasts. Make the glaze ahead of time for super fast dinner prep. This dish is a hit with the whole family!

Yield: 2 Servings


  • 2 tsp unsalted butter
  • 1/4 cup all-fruit apricot jam
  • 1 TB balsamic vinegar
  • 1/2 tsp chopped fresh rosemary
  • 1/8 tsp crushed red pepper flakes
  • 1 tsp kosher salt
  • 2 frozen chicken breasts (I use Foster Farms)
  • Kosher salt and freshly ground black pepper


Preheat oven to 375 degrees and spray a foil lined cookie sheet with cooking spray. Bake frozen breasts for 25 mins or until cooked through. Meanwhile, in a small saucepan, melt butter over medium heat. Add jam, vinegar, red pepper flakes, rosemary, and salt; stir to combine. Simmer for 3 to 5 minutes for flavors to meld. Keep warm.

When chicken is done, remove from the oven and brush both sides with glaze. Return to prepared pan and place under the broiler for 1-2 minutes to caramelize glaze. Serve chicken with additional glaze on the side or spooned on top.


To speed preparation, apricot balsamic glaze can be made up to 3 days ahead.  Simply warm on the stovetop or in microwave when needed.  This glaze works equally well on grilled chicken.
