Thai-Flavored Venison Lettuce Wraps

Ingredients

  • Non-stick cooking spray
  • 1 lb venison tenderloin – thinly sliced
  • 1 TB minced ginger
  • 2 tsp minced garlic
  • 1 red bell pepper, thinly sliced
  • 1 cup cole slaw mix (or substitute 1 cup shredded cabbage)
  • ½ cup thai sweet chili sauce
  • 1 TB low-sodium soy sauce
  • 1 TB fish sauce
  • ½  cup minced scallions
  • 1/2 cup cilantro
  • ½ cup minced mint
  • 1 head romaine lettuce, separated into leaves
  • 1/2 cup chopped salted, roasted peanuts
  • 1 lime, cut into 12 wedges

Instructions

Coat a large non-stick sauté pan with cooking spray and heat on high. Add venison in batches and brown on both sides (if the pan gets crowded the venison won’t brown). Remove browned venison to a plate and reserve. Reduce heat to low, add, peppers, and garlic to pan and cook for 5 minutes, stirring often, until peppers are softened. Add cole slaw mix, chili sauce, soy sauce, fish sauce, scallions, and venison to pan. Toss to combine and heat through. Serve venison on top of whole romaine leaves garnished with cilantro, mint, peanuts, and lime wedges.
