Yield: 30 Servings

  • 10 pitted dates
  • 1/2 cup cocoa powder
  • 1/3 cup creamy peanut butter
  • 1 1/2 TB agave nectar
  • 3 TB water
  • ¼ tsp table salt
  • ½ cup white chocolate chips
  • 1 tsp vegetable oil

Puree dates, cocoa powder, peanut butter, agave nectar, water and table salt in a food processor or blender. Spoon mixture into 30 mini cupcake liners (each the size of a rounded teaspoon) and press with back of spoon into a patty shape. Mix white chocolate chips and oil in a small glass bowl and microwave for 30-60 seconds, stirring often, until smooth. Spread evenly over the top of each patty and let set.
