South African Cucumber Relish

Known as Kokombar Sambal, this bright and fresh relish is delicious on its own or over a salad. Try it on traditional South African Bobotie and Geel Rys.

  • 2 english/seedless cucumbers, peeled, seeded, and diced
  • 1 tsp kosher salt
  • 1 TB cider vinegar
  • 1 clove garlic, minced
  • 1 TB fresh mint, minced
  • 2 tsp minced jalapeno pepper


Toss cucumber with salt in a medium sized bowl.  Cover and refrigerate for 2 hours.  Drain well in a colander but do not rinse.  Stir in remaining ingredients and serve.
