Grilled Sweet Baby Bell Peppers with Oregano Vinaigrette

Sweet baby bell peppers are even more delicious when grilled and tossed in my flavor forward oregano vinaigrette. They make a perfect side for any summer barbecue or evening meal.

Cook Time: 8-10 minutes
Yield: 6 Servings


       Oregano Vinaigrette

  • 1 tsp fresh oregano, minced
  • 1 tsp extra virgin olive oil
  • ½ tsp white wine vinegar
  • ½ tsp garlic salt
  • ½ tsp cumin


  • 1 lb tricolor baby peppers (~36)
  • 6 large skewers
  • 1 tsp fresh oregano, minced, for garnish
  • Cooking spray


Combine all vinaigrette ingredients in a small bowl. Drizzle over peppers and toss to coat. Thread peppers evenly across skewers widthwise. Coat a grill pan or outdoor grill with cooking spray and heat over high heat. Grill peppers for 4-5 minutes per side until evenly charred. Garnish with additional fresh oregano and serve warm or room temperature.
