Turkey Burgers with Bacon & Blue Cheese

These turkey burgers may be the dish that makes you a fan of the leaner, healthier option to traditional beef. Bold, savor blue cheese and minced portobello mushroom elevate the flavors and make this dish seem more decadent than it really is.

  • 1 large portobello mushroom cap, chopped (1 cup)
  • 1/3 cup chopped shallot
  • 1 TB light mayonnaise
  • 2 tsp minced rosemary
  • 3/4 tsp kosher salt
  • ½ tsp Worcestershire sauce
  • 1 lb lean ground turkey
  • cooking spray

       Blue Cheese Spread

  • 2 TB light mayonnaise
  • 2 TB crumbled blue cheese
  • ¼ tsp Dijon mustard
  • pinch ground pepepr
  • 4 slices bacon, cooked
  • 4 slices tomato
  • 4 pieces lettuce
  • 4 sandwich thins


Combine mushroom, shallot, rosemary, Worcestershire, mayonnaise and salt in a food processor and pulse until minced fine. Combine with turkey and form 4 -3 ½” wide patties. Chill until ready to grill.

Combine mayonnaise, blue cheese, Dijon mustard and pepper in a small bowl. Reserve.

Coat a grill pan or outdoor grill with cooking spray. Heat over medium-high heat and grill burgers for 5-6 minutes per side or until cooked through. Top each burger with 1 TB blue cheese spread, 1 slice bacon, lettuce, and tomato before serving.


Blue cheese spread and burger patties can be made up to 2 days before cooking.
