Slow Cooker Red Lentil Coconut Curry Soup

Ingredients

1 -15 oz can Goya Coconut Milk

2 1/2 cups vegetable broth

2 cups red lentils

1 -15 oz can diced tomatoes

1 large onion, chopped

1 TB minced ginger

1 TB minced garlic

1 TB curry powder

1 tsp mustard seed

1/2 tsp ground coriander

1/2 tsp cumin

1/4 tsp cayenne pepper

3/4 tsp Goya adobo or salt

How To: Combine ingredients in your slow cooker & cook for 6 hrs on low or 3 hrs on high. Done!

Serve garnished with lemon wedges and cilantro. Also excellent on top of Goya rice!
